FIREPROOF: Curtis Duffy’s Coconut Basil Pancakes

In Fireproof, I discuss my love of coconut in any form. Coconut fills you up, but it also explodes with flavor every time you take a spoonful. It’s the ultimate luxury food.

The different stages of coconut growth are each amazing and delicious. And at every stage, all the flesh on the inside is edible. It fascinates me. I love raw coconut. I love coconut water. I love young coconut, old coconut, and mature coconut. It’s rich and fatty and creamy—and it lends itself to so many different things; sweet and savory and everything in between. For me, coconut is a fatty luxury that brings a dish to the ultimate level of decadence. When something’s very fatty, it usually absorbs a lot of flavor, but coconut also doesn’t mask a lot of flavor, which is a crazy thing. It takes on flavor very easily, and it goes well with things. I’m not a dairy guy, so I replace that with coconut, and it becomes a little bit healthier… But you still get the same texture and feel in your mouth as if you were adding heavy cream. Here is my recipe for pancakes using coconut.

FIREPROOF: Curtis Duffy’s Coconut Basil Pancakes

For the batter
  • 1 cup all-purpose flour (145g)
  • 1 cup whole wheat flour (145g)
  • ½ teaspoon baking soda (3g)
  • 1 teaspoon baking powder (4g)
  • ¾ teaspoon salt (4g)
  • 7 tablespoons sugar (90g)
  • 3 eggs, beaten
  • 4 tablespoons (½ stick) butter, melted (56g)
  • ¾ cups coconut milk (450g)
  • ½ cup loosely packed fresh basil, chopped (30g)
  • Zest of 2 limes
For the Lime Sugar-Salt
  • 2 tablespoons dried lime peel (10g)
  • ¾ cup powdered sugar (100g)
  • 2 teaspoons fine sea salt (10g)
  • ½ cup coconut milk powder (50g)
To make the pancakes
  1. Sift the flours, baking soda, baking powder, salt and sugar together in a large bowl.
  2. Combine the eggs, butter, and coconut milk in a second large bowl. Fold in the dry mixture.
  3. Fold in the basil and lime zest. Let the batter rest before cooking.
  4. Scoop the batter onto a hot griddle or pan. Cook for two to three minutes, then flip. Continue cooking until brown on both sides.
  5. Lightly dust the warm pancakes with the Lime-Sugar Salt.
To make the Lime-Sugar Salt
  1. Blend or grind the dried lime peel into a powder. Mix with the sugar, salt, and coconut milk powder, and sift together. Reserve in an airtight container.
